DECADENT CHOCOLATE SHEET CAKE [GLUTEN FREE option]

Easy sheet cakes are a thing around here. I don’t think I’ve ever posted a sheet cake because, really, it’s not so fancy or exciting. HOWEVER, I have an easy chocolate glaze that requires no whipping- just melting & mixing with a whisk. It’s a breeze!!

Whether you decide to make Chocolate Cake from scratch, or use a box cake mix- this glaze will enhance it using one simple thing- awesome chocolate. Next time you’re Trader Joe’s, stock up on a few bars of Valhrona Chocolate bars! They’re affordable and better quality than what you find in your average grocery store.

DECADENT CHOCOLATE SHEET CAKE

CAKE INGREDIENTS:

  • 2 Cups granulated white sugar

  • 1 3/4 C All purpose Flour or 1:1 Gluten Free Baking Flour (like Bob’s Red Mill or Cup4Cup)

  • 3/4 C Unsweetened Dark Cocoa Powder (like Hersey’s or Valerhona)

  • 1 1/2 teaspoons baking powder

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 2 large eggs, room temperature

  • 1/2 Cup vegetable oil

  • 2 teaspoons vanilla extract

  • 1 Cup Extra Hot Coffee or Boiling Water

CAKE METHOD:

1.  Preheat oven to 350 degrees

2.  Combine dry ingredients in a bowl. Add eggs, oil, and vanilla. Using an electric hand mixer or a stand mixer, beat on low 2 minutes. Slowly add coffee or water (batter will be thin).

3.  Spray 9x13 pan well with non-stock cooking spray. Pour batter in evenly. Bake cake 25-30 minutes. Cool before glazing.

GLAZE INGREDIENTS:

  • 3.5oz 71% Dark Valrhona Chocolate, chopped.

  • 6 tablespoons butter, cut into small cubes

  • 2 tablespoons unsweetened dark cocoa powder

  • 2 cups powdered sugar

  • 1/2 cup warm milk

GLAZE METHOD:

  • Combine chopped chocolate and butter in a microwave safe bowl. Microwave for one minute in two 30 second intervals, whisking between intervals, until chocolate is completely melted and fully incorporated to butter.

  • Add cocoa powder and powdered sugar, whisking to combine. Add 1/2 the milk and whisk to combine, Add remaining milk and whisk until all ingredients are fully incorporated and smooth.

  • immediately pour over cake and place cake in refrigerator to set (approximately 20 minutes). Add sprinkles to garnish, if desired.
