APPLE GALETTE

SEPTEMBER 2020 | The Honest Spoon

It may still be blissfully warm outside, but Apple season is in full swing! We went for a ride this weekend and picked up some apples from the local farm store. As much as I love summer & berry picking- Fall & Apple season are a very close second!!

This recipe is quick and easy to pull together. It uses a store bought pre-made pie dough (gasp). I have no shame in this- Trader Joe’s has a decent pie crust in the freezer section. I always make sure to have a box on hand for when I’m not in the mood to make a scratch crust. If you haven’t tried it, I suggest you give it a whirl. It’s great in a pinch!

Here’s what you’ll need:

  • store bought frozen pie crust, thawed overnight in the refrigerator.

  • 6 medium Granny Smith apples

  • Light brown sugar

  • Cinnamon

  • Flour

  • heavy cream (optional)

APPLE GALETTE

(Serves 4-6)

INGREDIENTS:

  • 1 pie crust (This one is TraderJoe’s premade)

  • 6 medium Granny Smith apples

  • 1/2 cup light brown sugar

  • 1 teaspoon cinnamon

  • 1 tablespoon all purpose flour

  • Juice of 1/2 lemon

METHOD:

1.  Preheat oven 400F. Line a baking sheet with parchment.

2.  Peel and core all apples. Cut each apple in half and slice into 1/4” slices. Mix apples, sugar, cinnamon, flour, and lemon juice. Set aside.

3. Roll out a thawed pre-made pie crust to a 14” circle. Place on parchment. Arrange apple slices in center, leaving two inches of pastry around the edge.

4. Fold pie crust up and around apples. Optional: Brush pastry with heavy cream & sprinkle with raw sugar.

5. Bake 45-60 minutes or until pastry is golden brown. Let cool 15 minutes. Serve warm.

Serve plain, dusted with powdered sugar or drizzled with salted caramel. You can also serve with whipped cream or vanilla ice cream.
